Guatemala La Colina by Tony Medina
Tastes: Cocoa, hazelnut, subtle fruit
Process: Fully washed & sun dried
La Colina means “The Hill.” It is named after the hill upon which the farm is located, and the hilly topography of the land. The farm was named by Tony Medina’s father, who inherited the plot from his own father, who distributed the farm as smaller plots among all his children.
Initially, Tony planted only basic grains like corn and beans. But he also tells that it has always been his dream to have a coffee farm. He worked on different coffee farms while still at a young age to learn and gain experience.
In 1991, Tony planted his first coffee tree. Slowly but steadily, Tony increased the number of trees and the production. After 25 years, Tony’s perseverance has paid off and his dream has come true. La Colina’s varieties include Caturra and Bourbon. Tony wants to continue to improve overall quality by planting other varieties and implementing African raised beds to improve drying.
